Orange Ginger Chicken Stirfry

Ingredients
- 2 cloves garlic, minced
- 3 tbs. reduced sodium soy sauce
- 2 tbs. orange juice
- 1 tbs. minced ginger
- 1 lb boneless skinless chicken breast, thinly sliced
- 1/2 tsp. canola oil, divided
- 4 scallions, thinly sliced
- 1 red bell pepper, thinly sliced
- 1 c. broccoli florets
- 1 tbs. sesame seeds
- 2 c. cooked brown rice

Preparation
Step 1
1. In a big bowl, whisk together garlic, soy sauce, orange juice and ginger. Add the chicken and toss it around just enough to coat it. Refrigerate for 15 minutes.
2. Heat your skillet over medium heat. Spray the skillet with oil.
3. Throw in scallions, peppers, broccoli, and 1 tbs. water. Stir fry them until tender, then toss them in a new bowl.
4. Spritz skillet again with oil. Add chicken and the marinade and cook. Then add the veggies and cook everything together. Serve over rice.
