Chicken Stew

Have this delicious meal ready and waiting. Juice may be left as is or it can be thickened. I adapted this recipe from Jean Pare's Slow cooker recipe by adding extra vegetables. Its especially good if you can get fresh vegetables from the farm market in season.

Ingredients

  • 4 medium potatoes, cut bite size
  • 4 medium carrots, cut bite size
  • 2 parsnips, cut bite size
  • 1 small turnip/ rutabaga cut bite size
  • 2 handfuls wax/green beans trimmed and snapped
  • 1 large onion chopped
  • 2 lbs boneless chicken thighs, cut bite size
  • 2 cups low sodium chicken broth
  • 1 tsp of salt
  • 1/4 tsp pepper
  • Few sprigs of fresh thyme
  • 1/2 tsp Liquid gravy browner

Preparation

Step 1

Layer potato, carrot, onion and other vegetables in 5 quart slow cooker. Lay chicken thighs on top. Stir next ingredients together in bowl. Pour over chicken. Cover. Cook on low for 9-10 hours or on high 4 1/2 -5 hours.
