Very tasty chili! It is just on the edge of being too hot. We added chili beans and that really helped.

Ingredients
- 3 Tbsp. vegetable oil
- 1 large yellow onion, coarsely chopped
- 1 Tbsp. chopped garlic
- 1 1/2 lbs. top sirloin beef, cut into 1/2-inch chunks*
- 1 1/2 lbs. lean pork butt, cut into 1/2-inch chunks*
- 1 Tbsp. ground cumin
- 2 tsp. salt
- 1 tsp. black pepper
- 4 C. beef broth
- 1/3 C. chili powder
- 1 tsp. dried oregano
- 2 Tbsp. masa harina (or may use fine cornmeal as a substitute)
- 1 can chili beans (optional)
- freeze meat slightly for easier cutting

Preparation
Step 1
In a soup pot, heat oil over medium-high heat. Add onion and garlic and cook 4 to 5 minutes, stirring occasionally. Stir in beef, pork, cumin, salt and pepper and cook an additional 5 to 7 minutes, or until meat is browned.
Stir in beef broth, chili powder and oregano; reduce heat to medium-low and simmer. Add the masa harina; stir well.
Cover and continue to simmer over low heat 1 hour, or until meat is fork-tender, stirring occasionally.
May put some into a food processor to "grind" meat.
