Ingredients

  • 1 (8-pound) 1 (8-pound) rib roast
  • 3/4 cup 3/4 cup Dijon mustard
  • 2 tablespoons 2 tablespoons cracked peppercorns (red, green, and black)
  • 5 tablespoons 5 tablespoons garlic, minced
  • 2 tablespoons 2 tablespoons sea salt

Step 1

Rub the rib roast with mustard, peppercorns, garlic, and salt. Allow to sit in the refrigerator overnight wrapped in plastic wrap.

Preheat oven to 450°F.

The next day, allow roast to come to room temperature before baking. Place fat-side up in a roasting pan on the lowest rack of the oven. Roast 45 minutes, then reduce oven temperature to 350°F. For medium rare, cook about 90 minutes. Modify cooking time to your personal doneness preference.

Allow to sit for 20 to 30 minutes prior to serving.
