Peppercorn & Mustard Prime Rib Roast

The mustard and mixed peppercorn rub on this prime rib is sure to be a hit. It's festive for a holiday meal - and every day's a holiday somewhere!

- 1(8-pound)1 (8-pound) rib roast
- 3/4cup3/4 cup Dijon mustard
- 2tablespoons2 tablespoons cracked peppercorns (red, green, and black)
- 5tablespoons5 tablespoons garlic, minced
- 2tablespoons2 tablespoons sea salt

Step 1
Rub the rib roast with mustard, peppercorns, garlic, and salt. Allow to sit in the refrigerator overnight wrapped in plastic wrap.
Preheat oven to 450°F.
The next day, allow roast to come to room temperature before baking. Place fat-side up in a roasting pan on the lowest rack of the oven. Roast 45 minutes, then reduce oven temperature to 350°F. For medium rare, cook about 90 minutes. Modify cooking time to your personal doneness preference.
Allow to sit for 20 to 30 minutes prior to serving.
