Crab Stuffed Filet Mignon

Ingredients

  • 1/2 C lump crabmeat, drained
  • 2 Tb shredded parmesan cheese
  • 1 Tb chopped green onion
  • 1 tsp butter, melted
  • 2 beef tenderloin steaks (6 oz each)
  • 1/4 tsp salt
  • 1/8 tsp pepper

Step 1

1. In a small bowl, combine the crabmeat, cheese, onion and butter. Sprinkle steaks with salt and pepper. Cut a horizontal slit through each steak to within 1/2 inch of the opposite side, forming a pocket. Fill with 1/2 cup crab mixture. Secure with kitchen string if necessary.

2. Broil 4 inches from the heat for 7-9 minutes on each side or until meat reaches desired doneness(for medium-rare, a thermometer should read 145*; medium 160*; well done 170*). Let stand for 5 minutes before serving.
