Potted Shrimp

Ingredients

  • 1 4 1/2 oz. can broken shrimp
  • 1/4 c. lemon juice
  • 1/4 c. butter at room temperature
  • 1 8 oz. pkg. cream cheese at room temp
  • 1 Tbs. dill
  • 1/2 tsp. salt
  • Dash cayenne
  • Few springs of parsley
  • 2 green onions
  • 1 Tbs. coarsely ground black pepper

Preparation

Step 1

Drain and soak shrimp in lemon juice for 1 hour. Drain again. Process butter and cream cheese until light and creamy. Add and process dill, salt, cayenne, and parsley. Add green onion and drained shrimp and process with 4-5 on-off pulses. Put in serving dish. Top with pepper.

Refrigerate for 5 hours or overnight. Bring to room temperature and serve on crackers.
