SIRLOIN ROAST RUBBED WITH DILL

Ingredients
- ◾1 2-lb. 4-inch thick strip sirloin roast
- ◾sea salt and pepper, to taste
- ◾1 1/2 C. finely chopped cill
- ◾2 Tbs. yellow mustard
- ◾1 Tbs. olive oil

Preparation
Step 1
Sear sirloin roast in a large oven-proof pan on all sides. Remove from heat. While the meat cools for a minute or two, preheat the oven to 425 degrees, and spread mustard all over the roast. Top with salt, pepper, and chopped dill. gently press into the meat. Carefully lift roast out of the pan and brush the 1 Tbs. of oil into the bottom of a roasting pan. Place sirloin roast back into the pan and cook for about 50 minutes for medium rare. Allow meat to rest for 10-15 minutes prior to slicing and serving
