- 1/2 cup xylitol
- 1 large avocado
- 6 tablespoons coconut butter
- 6 tablespoons raw cacao powder
- 3/4 teaspoon vanilla
- 1/4 teaspoon sea salt
- 1/2 cup unsweetened coconut flakes
Preparation
Step 1
Place the xylitol in a food processor and grind to a fine powder. Add the avocado, coconut butter, raw cacao powder, vanilla, sea salt and process until smooth. Transfer to a shallow bowl and refrigerate about 2 hours (or freeze for about 30 minutes) until fairly firm.
Line a cookie sheet with waxed paper. Place the coconut flakes in a shallow plate.
Using a small cookie scoop or a melon baller, scoop the chilled mixture and roll around in your hands to create even balls. Roll each ball in the coconut flakes and place on the prepared cookie sheet. Refrigerate until ready to serve.
