Tuna and Pasta Salad

Ingredients

  • 3 large bell peppers
  • 2 Tbs. plus 1/4 c. olive oil
  • 1/2 tsp. cayenne
  • 2 tsp. dry mustard
  • 1/4 tsp. pepper
  • 1 Tbs. minced garlic
  • 3 Tbs. wine vinegar
  • 1/2 lb. pasta, cooked
  • 1 c. coarsely chopped celery
  • 1 medium onion, chopped
  • 2 cans tuna, 7 oz. each, packed in olive oil
  • 1/2 c. finely chopped parsley
  • 4 Tbs. fresh chopped basil (opt.)

Preparation

Step 1

Lightly saute bell peppers until tender. Combine salad dressing ingredients: mustard, pepper, garlic, vinegar, olive oil.

Toss hot pasta with the salad dressing. Add celery, onion, and sauteed peppers. Add tuna with its oil and toss again. Sprinkle with the parsley and basil and toss again, trying to keep tuna from breaking up.

Serve at room temperature.
