Chicken Cordon Bleu Casserole

Ingredients

  • 1/2 pound penne pasta or Wild Rice
  • 1 lb cooked ham cubed 2-3 cubes
  • 2 lg chicken breasts
  • 1 pt half and half
  • 1 8 oz cream cheese
  • 1/4 tsp white pepper
  • 1/4 tsp thyme
  • 1/4 tsp cayenne pepper
  • 1/2 tsp garlic
  • 1 tsp salt
  • 1 T dijon mustard
  • 8 oz swiss cheese shredded
  • Panko topping
  • 1 3/4 cups panko bread crumbs
  • 1/4 tsp Salt
  • 14 garlic powder
  • 1 T parsley
  • 6 T butter melted

Preparation

Step 1

spray 9 x 13 pan with pam
cook pasta/rice in salted water

Meanwhile, heat and stir half-and-half, cream cheese, white pepper, thyme, cayenne pepper, garlic, salt and Dijon mustard over medium heat until cream cheese is melted and mixture is smooth.

In a large bowl, combine cooked pasta/rice, ham, chicken and cream sauce. Fold in Swiss cheese. Pour mixture into prepared baking dish.

In a medium bowl, combine panko, salt, garlic and parsley. Mix in melted butter. Sprinkle panko topping over pasta mixture. Bake, uncovered, at 350 degrees for 30 minutes or until panko is light golden brown.
