Calzone Margherita Filling

Ingredients

  • 1 calzone dough recipe
  • 1 pound tomatoes, peeled, seeded and diced
  • 1/2 teaspoon salt
  • 8 ounces mozzarella cheese, finely diced or grated.
  • 1/4 cup freshly grated Parmesan cheese
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 8 basil leaves, diced or 1/2 teaspoon dried
  • 1/2 teaspoon dried oregano
  • 1/8 teaspoon ground black pepper

Preparation

Step 1

Place tomatoes in a colander, sprinkle with the salt.

In a medium bowl, combine the mozzarella cheese, Parmesan cheese, olive oil, garlic, basil, oregano, and pepper. Add tomatoes and toss to mix.

Arrange dough circles on a large, greased baking sheet, with half of each circle off the edge of the baking sheet. Place 1/2 cup filling on the half of the calzone dough on the baking sheet, leaving a 1 inch border around the rim. Fold dough over to cover the filling. Press edges to seal. Crimp decoratively by folding lower edge up and over top edge at 3/4 inch intervals.

Bake on lowest rack of oven at 450 degrees for 20-25 minutes.

Let rest for 10 minutes before serving.
