Calzone Con Salsicca Filling

Ingredients

  • 4 links Italian sausage (approximately 3/4 pound)
  • 3 tablespoons olive oil
  • 4 bell peppers, thinly sliced (approximately 1 pound)
  • 3 medium onions, thinl sliced
  • 1 tablespoon salt
  • 1/4 teaspoon ground black pepper
  • 4 ten inch round dough for calzones, see recipe

Preparation

Step 1

Preheat oven to 450 degrees.

Prick sausage with a fork. Place sausage in a medium skillet containing 1/2 inch of water. Cover and simmer over medium heat until water evaporates, about 20 minutes. Uncover and cook until browned. Let stand until cooled. When cool, cut sauage into 1/4 inch pieces.

In a large skillet over moderate heat, heat olive oil. Add bell peppers and cook about 5 minutes, Add the onions, salt and the pepper. Continue to cook until peppers are soft and the onions are lightly browned, about 15 minutes.

Mix the sausage with the peppers and onions.

Note:

Above steps can be done hours in advance.

Arrange 4 dough circles on a large greased baking sheet with half the circles off the edge of the baking sheet. Place 1/2 cup of the filling on the half circle on the baking sheet, leaving a 1 inch border around rim. Fold dough over to cover the filling. Press edges to seal. Crimp decoratively by folding lower edge up over top edge at 3/4 inch intervals.

Bake in 450 degree oven on lowest rack, for 20-25 minutes.

Serve hot.
