Ingredients
- 1 1/2 cups dates, pitted
- 1/2 cup milk, hot
- 1 banana, very ripe, mashed
- 3 cups King Arthur flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 1/2 teaspoons nutmeg
- 1 cup light brown sugar, firmly packed
- 2 eggs, lightly beaten
- 1/2 cup melted butter
- 1 cup chopped walnuts
Preparation
Step 1
Preheat oven to 350 degrees.
Grease and flour a 9 x 5 inch baking pan.
Combine 1/2 cup of the dates with milk in a food processor or blender. Blend to mince dates. Set aside.
Sift together the flour, baking powder, baking soda, salt and nutmeg. Set aside.
Mix together the sugar, eggs, butter, banana and the date milk mixture in a mixing bowl. Stir in the dry ingredients, mixing just to blend. Stir in remaining 1 cup dates and the nuts.
Pour batter into a greased and floured 9 x 5 inch loaf pan,
Bake at 350 degrees for 60-75 minutes or until a cake tester, inserted into the center of the bread, comes out clean.
Cool on wire rack for 5-10 minutes. Turn loaf onto rack to cool completely.
