Ingredients
- 2 C of cold mashed potatoes
- 1 C Shredded cheese (cheddar)
- 1/2 C Flour
- 6 strips of cooked bacon
- 1 medium onion chopped
- 2 eggs
- 2 TBSP fresh basil chopped
- 2 cloves of garlic, chopped
- 1 tsp salt
- 1/2 tsp pepper
- 4 TBSP butter

Preparation
Step 1
1. Crumble the bacon into small bits, place into a large bowl
2. Pour off all but 2Tbsp of jason greece from the frying pan & over a medium heat cook the garlic and onion until translucent.
3. Add the bacon bits along with the remaining ingredients (except butter) and blend well with a spoon or your hands (it will be sticky)
4. Wash & Dry your frying pan, then melt 1Tbsp of the butter over a medium heat
5. Scoop up about 1/4 cup of the potato mixture and form it into a ball. Place into the hot pan, flattening it out until it's about 1/2-3/4" thick
6. Fry for about 3 minutes on each side, until they are golden brown.
7. For best results, serve immediately, while hot & crispy
8. Top with green onions, sour cream or ketchup
