Ingredients
- 1 C coconut milk
- 1 TBL red curry paste
- 1 TBL satay or chili paste
- 2 TBL creamy peanut butter
- 2 TBL sugar
- 1 TBL tamarind juice or lime juice
- 1/2 tsp salt
Preparation
Step 1
whisk in curry & satay pastes
stir in peanut butter, sugar, tamarind juice & salt
simmer for 10 min, until slightly thickened
remove from heat & let sauce cool at room temp until chicken is ready to serve
NOTE: COCONUT MILK, RED CURRY PASTE, SATAY OR CHILI PASTE & TAMARIND JUICES CAN BE FOUND IN ASIAN MARKETS
