PEANUT SAUCE (use with Chicken Satay)

Ingredients

  • 1 C coconut milk
  • 1 TBL red curry paste
  • 1 TBL satay or chili paste
  • 2 TBL creamy peanut butter
  • 2 TBL sugar
  • 1 TBL tamarind juice or lime juice
  • 1/2 tsp salt

Preparation

Step 1

whisk in curry & satay pastes
stir in peanut butter, sugar, tamarind juice & salt
simmer for 10 min, until slightly thickened
remove from heat & let sauce cool at room temp until chicken is ready to serve

NOTE: COCONUT MILK, RED CURRY PASTE, SATAY OR CHILI PASTE & TAMARIND JUICES CAN BE FOUND IN ASIAN MARKETS
