STEAK SOUTHWEST

Ingredients

  • 2-1/2 LB flank steak
  • 2 onions, sliced
  • 2 cloves garlic, crushed
  • 1/4 C butter or margarine
  • 1/2 C dark rum
  • 1 TBL chili powder
  • 1 tsp dried oregano leaves
  • 1 tsp salt

Preparation

Step 1

wipe flank steak w/ damp paper towel
w/ tip of sharp knife score both sides about 1/9" deep in diamond pattern

in sm. saucepan or skillet, saute onions, garlic in butter 5 min or until onion is golden
stir in rum, chili powder & oregano
bring to boil
cover - simer 5 min
pour into lg. shallow baking dish
let cool to warm
place steak in marinade, turning to coat both sides
cover w/ plastic film
marinate at room temp 40 min, turning steak occasionally
remove steak from marinade & pat dry w/ paper towels

place on rack of broiler pan
sprinkle w/ 1/2 tsp salt

broil 4" from heat 4 min
turn, sprinkle w/ 1/2 tsp salt & top wi/ onions from marinade
broil 4 min for rare

remove to carving board or platter
carve on slight slant into thin slices
