Red Velvet Decadence Cookies


These are wonderful, decadent chocolate chunk cookies that carry that gorgeous red velvet hue but with an inherently rich cocoa flavor. But Red Velvet colour and flavor agent, takes it up a notch. Ingredients

  • 1 cup unsalted butter, room temperature
  • 1 cup white sugar
  • 2/3 cup golden brown sugar, packed firm
  • 3/8 teaspoon salt
  • 2 teaspoons pure vanilla
  • 2 eggs
  • 1 tablespoon red velvet colour/flavor
  • 2 1/4 cups all-purpose flour
  • 2/3 cup cocoa (measured, then sifted)
  • 3/4 teaspoon baking soda
  • 1 tablespoons cream
  • 1 cup semi-sweet chocolate chips or chunks
  • 1 cup white chocolate chunks or chips

Preparation

In a mixer bowl, cream the butter with the two types of sugars and salt. Blend in the eggs, vanilla and red velvet flavor. If mixture seems curdled, stir in 1/4 cup of the flour to bind.

In another bowl, stir together the flour (minus the 1/4 cup if you've already added it), cocoa, and soda. Mix into batter on low speed of mixer, scraping bowl sides often. When almost mixed, stir in cream. Fold in chocolate. Chill batter 20-60 minutes.

Preheat oven to 350 Degrees F. Line a doubled up baking sheet with parchment paper. Position oven rack in upper third of oven

Place dough on prepared sheet, using about a quarter of a cup of batter per cookie. Press down slightly with wet hands. Leave two inches of space between each cookie.

Bake until cookies just look barely set - middles will seem slightly wet - about 12-15 minutes.
Let cookies cool very well, about 10 minutes on the baking sheet before removing with a metal spatula. Cool on a rack. Store in the refrigerator.
