CHICKEN MOZZARELLA

Ingredients

  • 6 boneless chicken breast halves, skinned
  • 1 tsp oregano
  • S & P, garlic powder to taste
  • 1 med onion, chopped
  • 2 C sliced, fresh mushrooms
  • 2 C tomato sauce
  • 3 TBL dry red wine
  • 4 oz skim-milk mozzarella, thinly sliced

Preparation

Step 1

season chicken breast halves w/ oregano,
S & P and garlic powder
preheat lg. non-stick skillet
over med heat, brown chicken lightly on both sides
add onion & cook 3 min longer or until onion is soft

add mushrooms & tomato sauce,
cover & simmer over low heat until chicken is tender - abt 15 min

stir in wine & simmer, uncovered for 5 min or until sauce is slightly thickened

place mix. in greased, shallow baking dish
place cheese slices on top
bake uncovered 450 - 5 min until cheese melted
