Ingredients
- 1 large Roaster Chicken (4-5 pounds). Washed. Lumps of fat removed and blotted dry
- 6 tbsp Sweet and Hot Rub
- 2 tbsp Salt
- 2 tbsp Pepper
- 2 tbsp Brown Sugar
- 1 12oz can of beer (you can use half a can of beer)
- Smoke baste: 3 tbsp of butter, melted mixed with 1/2 teas liquid smoke
Preparation
Step 1
Preheat the oven to 350 degrees.
Brush the cavity and outside with smoke baste. Sprinkle a third of the cavity with the rub. Sprinkle a third of the rub over the outside of the chicken. Make a few additional holes in the top of the beer can. Put the rest of the rub in the beer. I put a clove of garlic in one of the holes. Holding the chicken upright, insert the can into the cavity. Spread out the legs to form a sort of tripod so the chicken stands upright. I wrap the beer can in foil before inserting into the chicken.
Place the bird upright in a roasting pan and roast until golden brown. I check the chicken after 1 1/4 - 1 1/2 hours.
