Spaghetti Squash with Feta

Ingredients
- 2 halved, seeded spaghetti squash
- 1/4 c water
- 2 tbs olive oil
- 2 tbs tomato paste
- 1/2 tsp dried oregano
- pinch cinnamon
- pinch sugar
- 1/2 c water
- salt
- feta

Preparation
Step 1
Put squash in a microwave-safe bowl; add the 1/4 c water, cover and microwave 16 minutes. Let cool slightly, then scrape into strands with a fork. Heat olive oil in a skillet over medium heat. Add tomato paste, oregano, cinnamon and sugar; cook, stirring, 2 minutes. Add the 1/2 c water and bring to a simmer; season with salt. Add the squash and toss. Top with feta.
