Pastry Cream

Ingredients

  • 1 1/4 cups milk
  • 3 egg yolks
  • 1/2 cup, sugar
  • 1/4 cups, flour
  • 1 tsp. vanilla
  • 1 Tbs. butter

Preparation

Step 1

Bring the milk to a boil. Meanwhile, in a bowl, beat together the egg yolks, sugar and flour. Gradually beat the hot milk into the mixture. Return the mixture to the pan and bring to a boil, beating. Boil 1 min.; strain into a bowl and stir in vanilla and butter. Place a piece of plastic wrap on theeee custard surface and cool. Will keep for 1 wk. if not disturbed.
