Amazing Granola

I am crazy for granola, and this recipe is my best find yet! Adapted from E.A.T. Granola on Food on Fifth Blog.

Ingredients

  • 2 cups Whole Almonds
  • 1/2 cup Slivered Almonds
  • 1 cup Dried Tart Cherries
  • 1 cup Pecan or Hazelnut pieces
  • 1/2 cup Pepitas
  • 1/2 cup Dried Blueberries
  • 1 cup Unsweetened Coconut Flakes
  • 1-1/2 cups Old Fashioned Oats
  • 1/2 cup Molasses
  • 1-1/2 tablespoon Orange Marmalade
  • 1-1/2 tablespoons Fig Spread
  • 1 tablespoon Vanilla Extract
  • 2 tablespoons Water
  • 1 to 2 teaspoons Salt

Preparation

Step 1

Preheat oven to 325 degrees.

Line a large baking sheet with parchment.

In a large bowl, mix together all of the dry ingredients.

In a microwave safe container, combine the molasses, marmalade, fig spread, vanilla and water. Heat until hot, but don't boil it. Stir well to mix.

Pour hot mixture over dry ingredients and toss to coat, making sure all the dry ingredients are evenly coated.

Spread the mixture out on the sheet pan. Bake at 325 degrees for 35-40 minutes or until mixture turns a deep golden brown and looks caramelized. I set my timer for 30 minutes and then checked it every 7 minutes until it was caramalized.

Turn oven off the oven and sprinkle with salt, and allow the granola to cool completely in oven. I left it in the oven overnight. It was quite beautiful to see first thing in the morning. The house smelled amazing too!

Store in an airtight container.
