- 1 c dark molasses
- 1/2 c packed dark brown sugar
- 1/2 c unsalted butter, cut up
- 1 c orange juice
- 1/2 c finely chopped crystallized ginger
- 1 tsp grated fresh ginger
- 1 3/4 tsp baking soda
- 2 c all-purpose flour
- 1 1/2 tsp ground ginger
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/4 tsp salt
- 2 eggs, lightly beaten
- powdered sugar for sprinkling
Preparation
Step 1
1. Heat oven to 350 F. Spray 9-inch square baking pan with cooking spray; sprinkle with four, tapping out excess.
2. Cook molasses, brown sugar and butter in medium saucepan over medium heat 5 minutes or until butter is melted and mixture comes to a boil, stirring frequently. Remove from heat. Stir in orange juice, crystallized ginger and fresh ginger; let stand 15 minutes or until slightly cool. Stir in baking soda.
3. Meanwhile, whisk flour, ground ginger, cinnamon, nutmeg and salt in large bowl. make a well in center of flour mixture. Add eggs and molasses mixture; whisk until smooth. (Batter will be thin.) Pour into pan.
4. Bake 35 to 40 minutes or until toothpick inserted in center comes out clean and top springs back when gently touched. Cool on wire rack 30 minutes to serve warm, or cool completely. Sprinkle with powdered sugar before serving.
