Ingredients
- 12 large jalapeños
- 2 oz feta cheese, room temp
- 4 oz cream cheese, room temp
- 4 oz shredded hot pepper jack cheese OR sharp cheddar cheese
- small handful of fresh cilantro, finely chopped
- 2 Tbsp grated onion
- optional Bread Crumbs - Toast breadcrumbs to sprinkle heavily on the peppers stuffed with cheese
Preparation
Step 1
Preheat oven to 425 degrees F.
1. Cut 1/3 of each pepper off lengthwise and scoop out the seeds. Place on a baking sheet, lined with foil if you prefer that. If a pepper does not lie flat on the sheet, slice a thin piece of pepper off of the bottom so that it sits flat and does not roll around.
2. Mash the feta, cream cheese, shredded cheese, cilantro and onion together and stuff the peppers. ***sprinkle the breadcrumbs on the cheese mix, in the peppers, if using*** Roast for 15-18 minutes or until the peppers are tender and the cheese is brown at the edges and bubbly.
