COMFORTS CURRY CHICKEN SALAD

Ingredients

  • DRESSING:
  • 1 TBL madras curry powder
  • 1 TBL olive oil
  • 1 1/2 C mayo
  • 1 C mango chutney
  • 1 tsp cayenne pepper
  • 1 tsp salt
  • SALAD:
  • 2 green apples (cored, peeled & diced
  • into 1/2" squares)
  • 3 cooked chicken breasts (skins removed
  • & diced
  • 1/4 C currants
  • 1 green onion (chopped including some
  • of the greens)
  • 2 oz toasted slivered almonds

Preparation

Step 1

SALAD DRESSING:
heat olive oil in saute pan
add curry powder & cook at a low temp
for 2 min
remove from heat & let cool

in lg. bowl,combine ingredients
& add curry mixture
you may need to dice up mango pieces in
the chutney if they are too large

SALAD:
combine all ingredients in mixing bowl
and add 1/2 of the dressing
leave a little of green onions & toasted almonds for garnishing on top
add remaining dressing as needed
