Sausage and Rice Stuffed Bell Peppers

- 6 bell peppers, tops and seeds removed
- 1 pound Johnsonville Italian ground sausage
- 1-1/2 cups cooked rice
- 1 T grated onion
- 15 ounce can tomato sauce, divided
- salt and ground black pepper, to taste

Step 1
Preheat oven to 375.
Bring a pot of water to a boil. Add bell peppers to the boiling water and cook until softened, 5-8 minutes; drain.
Saute ground sausage in a large skillet over med-hi heat, breaking into small pieces with spatula as it cooks, until completely browned, 7-10 minutes. Drain and discard excess grease. Transfer browned sausage to a large bowl.
Combine rice, onion and half the tomato sauce with the ground sausage; season with salt and pepper. Stuff cooked bell peppers with the ground sausage mixture.
Arrange stuffed bell peppers in a baking dish. Pour water into the baking dish to about one inch deep. Pour remaining tomato sauce over the peppers.
Bake in preheated oven until heated through, about 30 minutes.
