Ingredients

  • 1 1/2 pounds cubed veal
  • 1 medium sized onion, chopped
  • 1 clove garlic, crushed
  • 3/4 cup tomato juice
  • 1 envelope 3/4 oz. instant chicken broth
  • 1/2 tsp. salt
  • 1/2 tsp. Italian seasoning
  • 1/4 tsp. pepper
  • 1 bay leaf
  • 2 sweet green peppers, sliced

Step 1


Coat large skillet with no-stick vegetable cooking spray; heat until hot. Add veal; brown over medium-high heat; push veal to one side. Add onion and garlic; cook until onion is lightly browned.

Combine tomato juice, instant chicken broth, salt, Italian seasoning, pepper and bay leaf; pour over meat. Cover; cook over low heat 30 minutes or until veal is almost tender add peppers cover; cook 15 minutes remove bay leaf before serving.
