Potato Bacon Casserole

Finally, a really good Breakfast Casserole Recipe! Super easy and delicious! Can be made for holidays, tailgating, brunches, or any time you want something a little special and out of the ordinary! The recipe came from the cookbook, "Best Recipes from American Country Inns and Bed & Breakfasts". This particular recipe came from Hale Lani Bed & Breakfast in Kauai, Hawaii. Our favorite place! Now I know why we like it so much!
Ingredients
- 4 cups frozen shredded hash browns
- 1/2 cup finely diced onion
- 12 cooked bacon slices, crumbled
- 1 cup shredded Cheddar Cheese
- 12 ounces evaporated milk
- 2 large eggs
- salt and pepper

Step 1
Preheat oven to 350 degrees. Layer half of the frozen potatoes, onion, bacon, and cheese in a lightly greased baking dish. Repeat layers. Combine evaporated milk, eggs, and salt and pepper to taste. Pour egg mixture over layers. Cover and bake 50-60 minutes. Uncover and bake 5 to 10 minutes to brown mixture. Let cool 15 minutes before serving. Garnish and serve with a side of fresh fruit.
