Ingredients
- For The Crab Stuffing:
- 2 1/4 pounds (about 5 cups) lump crabmeat
- 1 1/2 teaspoons minced parsley
- 1 teaspoon dried tarragon
- 1 tablespoon dry mustard
- 2 tablespoons white wine
- 1 tablespoon Tabasco sauce
- 2 teaspoons salt
- 2 teaspoons white pepper
- 1/2 cup mayonnaise
- 1 tablespoon mayonnaise
- For The Alexander Bread Crumbs:
- 2 cups bread crumbs
- 5 teaspoons minced garlic
- 2 teaspoons minced shallots
- 2 teaspoons chopped parsley
- 1 pinch salt, to taste
- 1 pinch pepper, to taste
- For The Mushrooms:
- 70 mushroom caps
- Alexander bread crumbs from recipe above,as required
- 1/4 cup clarrified butter for drizzling
- 24 lemon slices, for garnish
- 5 parsley sprigs, for garnish
Preparation
Step 1
To Make The Stuffing:
Place the crab meat in a mixing bowl. Add the remaining stuffing ingredients, except the mayonnaise. Mix with a silicone spatula. Add the mayonnaise and mix well.
To Make The Bread Crumbs:
Mix the bread crumb ingredients together until well blended. Set aside until ready to use.
To Make The Mushrooms:
Using a spoon, fill each mushroom cap with a heaping teaspoon of crab mixture. Place the prepared mushrooms on an ungreased baking sheet. Dust the tops with bread crumbs. Drizzle a little clarified butter over the top of the caps.
Bake for approximately 10 minutes.
Place under the broiler to brown the crumbs if necessary.
Garnish the serving plates with lemon slices and parsley. Place heated mushrooms on plate.
Serve warm.
