Mexican Chicken Roll Ups

Ingredients

  • 2 cream cheese
  • 2 c. cooked shredded chicken (2 green pkgs.)
  • 1 1/3 c. shredded Mexican cheese blend (I used 4 cheese blend)
  • 1 tsp. finely minced garlic
  • 1 1/2 Tbsp. chili powder
  • 1 tsp. cumin
  • 4 green onions chopped
  • 10 oz. can Rotel, drained
  • cayenne pepper to taste
  • salt to taste
  • 2 pkgs. burrito sized tortillas

Preparation

Step 1

Mix filling ingredients together, cover and refrigerate for at least 1 hour. Spread 2 heaping spoonfuls of filling on each tortilla. Roll up and cut into slices.
