Ingredients

  • 1 large egg white
  • 1 tsp water
  • 3/4 c whole wheat bread crumbs
  • 3 Tbsp grated Parmesan cheese
  • 1 Tbsp finely chopped fresh oregano
  • 1/4 tsp salt
  • 1/8 tsp black pepper
  • 4 (5oz) skinless tilapia fillets
  • 2 tsp olive oil
  • 1 pint cherry tomatoes, halved
  • 1 garlic clove, crushed

Step 1

Preheat oven to 250. Whisk egg white and water in a shallow dish. Combine bread crumbs, Parmesan, basil, oregano, salt and pepper; spread on a sheet of wax paper. Dip each into the egg whit mixture, letting the excess drip off. Coat with crumbs and place on another sheet of wax paper and spray with olive oil non-stick spray. Heat 1 tsp oil in non-stick skillet over medium-high heat. Add two fillets and reduce heat to medium. Cook until browned, about 5 minutes. Repeat. Wipe out skillet. add tomatoes and garlic. Saute until softened. Serve over fillets.
