Creamy Shrimp Bisque

Ingredients

  • 2 tbsp. butter
  • 1 cup sliced fresh mushrooms
  • 2 tbsp. sliced green onions
  • 1 clove garlic; minced
  • 1 can (10 oz.) chicken broth
  • 1 lb. shrimp - peel and deveined
  • 1/2 cup light cream
  • 3 tbsp. flour
  • 1/2 cup Chablis or other dry white wine
  • 1 tbsp. fresh parsley, chopped

Preparation

Step 1

In 10" skillet over medium heat, cook mushrooms in hot butter, add onions and garlic until tender, stirring occasionally. Add broth and shrimp. Heat to boiling.
Meanwhile, in cup, stir together flour and cream until well blended. Stir into broth mixture. Cook until mixture boils and thickens.
Add wine and parsley - heat through and enjoy!
