Ingredients
- 2 tbsp. olive oil
- 1 small onion, chopped
- 2 cloves garlic, chopped
- 1 bunch escarole, trimmed and coarsely chopped
- 1 pkg. Jimmy Dean's turkey sausage - add with onions
- 1/2 cup chicken broth (I add closer to 3/4 cup)
- 1 can (15 oz.) cannellini beans
- 1/2 pkg. (16 oz.) Fusilli pasta; cooked and drained
- 1/3 cup Romano cheese
Preparation
Step 1
Heat oil in a large skillet. Add onions and garlic and cook on low until sausage browns.
Add escarole, broth and beans (with liquid from beans), simmer for 8 minutes until escarole is wilted.
Add cooked pasta and cheese.
Toss and serve.
