PINEAPPLE CAKE

Ingredients

  • Cake:
  • 2 c. sugar
  • 1 1/2 t. baking powder
  • 2 eggs, beaten
  • 2/3 c. pecans, chopped
  • 2 c. cake flour
  • 1 t. vanilla
  • 1 20 oz can crushed pineapple
  • Frosting:
  • 1 8 oz package cream cheese, softened
  • 1 lb confectioner's sugar
  • 1 stick butter, creamed
  • nuts (optional)
  • Directions:
  • ●Combine cake ingredients and stir until well blended; do not use an electric mixer.
  • ●Pour mixture into a 9 x 13 inch pan.
  • ●Bake at 350 F. for 35 minutes. Cool before frosting.
  • ●Mix together frosting ingredients and pour over cake.
