Eggs for Brunch

Ingredients

  • 3 cups (12 oz) shredded cheddar cheese
  • 3 cups (12 oz) shredded mozzarella cheese
  • 1 4.5 oz jar sliced mushrooms
  • 1/3 cup green onions chopped
  • 2 Tbsp chopped parsley
  • 1/2 Tbsp dried basil
  • 1/2 cup sweet red bell pepper; chopped
  • 2 Tbsp margarine
  • 6 lg eggs
  • 2 cups diced cooked ham
  • 1 3/4 cup milk
  • 1/2 cup plain flour
  • 1/2 tsp black pepper

Preparation

Step 1

Combine cheeses; place 3 cups in an ungreased 13x9" dish; set aside. In skillet cook mushrooms, onion, and pepper in margarine; drain and layer over cheese. Top with ham then cheese. In another bowl, beat eggs and add milk; add to flour and spices a little at a time; mix well. Pour over cheese layers. bake at 350 degrees for 35-40 minutes or until knife inserted in center comes out clean. Let stand 10 minutes before serving.
