Ingredients
- 2 tsp. dried thyme
- 1/2 tsp chili powder
- 2 cloves garlic, minced
- pork tenderloin 1-1/2 pounds
- 1/2 pound butternut squash, cubed
- 1/2 red onion cut into wedges
- 1 cup seedless red grapes
Preparation
Step 1
Preheat oven to 425. Line baking pan with foil. Combine first three ingredients, along with salt and pepper in a small bowl. Rub all over pork. Place pork on one side of prepared pan. Add squash and onion to the other side of the pan, sprinkle with 1/4 tsp salt and 1/4 tsp black pepper. Drizzle pork, squash and onion with Tbsp. olive oil. Roast 15 minutes. Stir squash and onion. Add grapes. Roast 10-15 minutes more or until pork is done (145 degrees). Let stand 5 minutes before serving.
