Slow Cooker Mushroom, Turkey and Rice Soup

Ingredients

  • 2 cups fresh sliced mushrooms
  • 1 1/2 cups sliced bok choy
  • 1 medium onion, chopped
  • 2 medium carrots, sliced (1 cup)
  • 1 lb turkey breast, cut into 1" pieces
  • 29-32 oz chicken stock
  • 2 Tbsp soy sauce (reduced sodium)
  • 4 garlic cloves, minced
  • 1 tsp ground ginger
  • 1 cup instant rice

Preparation

Step 1

1. In slow cooker, place mushrooms, bok choy, onion, carrots, and turkey.
2. In bowl, combine stock, soy sauce, garlic and ginger. Pour over vegetables adn turkey in slow cooker.
3. Cover and cook on low for 8-10 hours or high for 4-5 hours.
4. Stir in rice. Cover and let stand for 5-10 minutes. Ladle into bowls.
