Freezer Tomato Sauce

Ingredients

  • 4 C chopped onion
  • 2 C chopped celery
  • 16 C tomatoes, peeled and quartered
  • 6 TBS butter or olive oil
  • 1/2 C chopped fresh parsley
  • 8 tsp sugar
  • 4 tsp salt
  • 4 TBS fresh basil, finely cut, OR 4 tsp dried basil, optional
  • Quick way to peel tomatoes is to blanch them in boiling water until the skin starts wrinkling. Then put them immediately in an ice bath (bowl of ice water to cover the tomatoes). After tomatoes are cool the skin should come off easily.

Preparation

Step 1

Saute onions and celery in oil until soft. Add tomatoes and remaining ingredients.
Cook until fairly thick. Ladle into pint containers and freeze.
Use for pasta sauce, soup base, pizza sauce.
