Country-Style Cube Steaks

“If you do not have ketchup on hand, you can create a less expensive substitute for this recipe by combining 1/2 cup tomato sauce and 1 tablespoon dark brown sugar.”

Ingredients

  • 3 tablespoons vegetable oil
  • 1/4 cup all--purpose flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 4 cube steaks (about 4 ounces each)
  • 1 medium onion, chopped
  • 1 green bell pepper, cut into strips
  • 1 tablespoon brown sugar
  • 1/2 teaspoon dry mustard
  • 1/2 cup ketchup
  • 2 tablespoons white vinegar
  • 2 tablespoons Worcestershire sauce
  • 1/4 cup water

Preparation

Step 1

Heat oil in a large skillet over medium-high heat. Combine flour, salt and pepper in a shallow bowl. Coat steaks with flour mixture.


Add steaks, onion and bell pepper to skillet. Cook, turning steaks once, until browned, about 5 minutes.


Add brown sugar, mustard, ketchup, vinegar, Worcestershire sauce and water to skillet; stir well.


Reduce heat to medium-low. Cook, covered, until steaks are tender, about 15 minutes.


NOTE:

Save time by using 1/2 cup prepared barbecue sauce in place of the brown sugar, mustard, ketchup and vinegar. Then add the Worcestershire sauce and water; proceed as recipe directs.
