Vegan Chickpea Stew

Ingredients

  • 1 can chickpeas, drained and rinsed
  • 2 cups fresh or canned tomatoes
  • 2/3 cup potatoes, diced
  • 1 cup onion, sliced
  • veggies of choice, diced
  • 1 tbsp. curry powder
  • 1 tbsp. garlic or garlic powder
  • 1 tbsp. turmeric

Preparation

Step 1

Combine all ingredients in slow cooker and cook on low for 6 to 8 hours.

Makes 6 servings.
