Ingredients
- 1 16oz can Fat Free Refried Beans
- 1 15oz can Black Beans, Rinsed
- 4 Scallions Sliced
- 1/2 Cup Prepared Salsa
- 1/2 tsp Cumin
- 1/2 tsp Chili Powder
- 1/4 Cup pickled jalapenos
- 1 Cup Shredded Cheese, Jack or Cheddar
- 1/2 Cup Sour Cream
- 1.5 Cup Chopped Romaine
- 1 Medium Tomato
- 1 Medium Avacado
- 1/4 Cup Sliced Olives
Preparation
Step 1
1. Combine 1st 7 ingredients in a bowl. Transfer to a shallow 2qt microwave safe bowl. Sprinkle with cheese.
2. Microwave on high until cheese is melted and beans are hot, 3 to 5 minutes.
3. Spread sour cream over hot bean mixture, then scatter with lettuce, tomato, avacado, and olives.
