zuchinni au gratin

Ingredients

  • 8 medium zucchini (2 lb)
  • Boiling salted water
  • 1/4 cup finely chopped onion
  • 1/4 cup butter
  • 2 1/2 Tbsp flour
  • 1 tsp salt
  • 1/8 tsp nutmeg
  • Dash of white pepper
  • Dash of cayenne
  • 1 1/2 cup milk
  • 2 Tbsp grated Parmesan cheese
  • 1 cup shredded natural Gruyere or Swiss Cheese

Preparation

Step 1

Scrub zucchini and cut off ends. Cook in boiling salted water to cover until just tender, 6-8 minutes. Drain, cover with cold water, and then drain again. Slice 14 inch thick.
In a large saucepan, cook onion in heated butter until soft, but not browned. Stir in flour, salt, nutmeg, pepper, and cayenne. Cook until bubbly. Gradually add milk, stirring constantly. Cook, stirring, until thickened; remove sauce from heat and stir in Parmesan cheese. Lightly fold in zucchini. Spread in a buttered, shallow 1 12 to 2 quart baking dish. Sprinkle with cheese. Bake in a 375 oven for 30 – 35 minutes until top browns lightly. Makes 8 servings.
