Mini Cupcakes

This recipe makes 14 mini cupcakes. Using my Mini Cupcake Maker- it shall take 8-10 Minutes for each batch. - 1 Batch (7 mini cupcakes) I'm guessing- Gas Mark 6 For 15 mins, Keep an eye on them, not used this recipe for the oven.

Ingredients

  • 60

    g- Caster Sugar

  • 60

    g- Self Raising Flour

  • 60

    g- soft, unsalted butter

  • 1

    Egg

  • For Vanilla: Add 1Tsp of Vanilla Essence with the Egg.

  • Or for Chocolate: Add 15g of Cocoa Powder and sieve with the flour.

  • Cases- Size are 31 x 19 mm

Directions

*Tip 1: Let the egg(- put the contents into a cup and cover with cling film) and butter warm up in room temperature before you use it. *Tip 2- To test they are cooked get a thin skewer type stick- put it in the cupcakes- then take it out, if the stick comes out clean it's cooked. --- (Pre- Heat Oven.) Cream the Butter and Caster Sugar together and whisk till pale and fluffy. Add the Egg and mix. .I'm doing chocolate. Sieve the Flour and Cocoa Powder together. Then mix (but not too much otherwise you will flatten the mix and make it heavy when it bakes!) but make sure it's a lovely smooth consistency). Pre- heat the M. C. Maker (which is quick!) Empty the mix into Cases (3/4 full) and then carefully put it in the Mini Cupcake Maker. (Or on a baking tray and put into the oven.) Then bake! Check them at 8 mins. They cook between 8- 10 mins. (Or 12 mins and see how they are doing.) Then take them out carefully and put them on a wire rack to cool.
