Apple Cider Pie

Ingredients

  • 1/3 cup Apple Cider
  • 2 tablespoons butter
  • 1/4 cup maple syrup
  • 8 cups thinly sliced apples
  • 1/4 cup brown sugar
  • 1/4 teaspoon nutmeg
  • 1/2 cup granulated sugar
  • 1/2 teaspoon cinnamon
  • 2 tablespoon cornstarch
  • 1 egg mixed for wash
  • 1/8 teaspoon salt
  • Granulated sugar
  • Pie Crust
  • 3 cups flour
  • 1 1/4 cups shortening
  • 1 egg
  • 1 teaspoon salt
  • 1 teaspoon cider vinegar
  • 5 tablespoons cold water
  • Combine water, egg, vinegar and salt. Mix well

Preparation

Step 1

Combine the first six ingredients into sauce pan. In two large skillets, melt 1 tablespoon butter in each skillet. Start cooking sauce while adding the apples to hot skillets. Cook sauce and apples for 5 minutes, stirring occasionally. Add one half of sauce to each skillet. Add
cinnamon and nutmeg evenly to each skillet. Simmer for 5 minutes until sauce has cooked down to syrup consistency. Cool slightly and add to pie crust. Apply top crust, brush with egg wash and sprinkle with sugar. Bake @ 400 f
or 45 minutes or until golden brown.

Pie Crust
Combine shortening and flour until "crumb” consistency is achieved. Add most of the liquid and combine with fork. Add more liquid if too dry. Shape into large ball, wrap in plastic and refrigerate. When chilled, cut in half and roll out each piece for bottom and top crust.
