HADDOCK*****Glazed Haddock Fillets

This was excellent for both. D loved it too and remarked that it was just the perfect amount and had a nice lemony flavour (Don't leave out the lemon rind) I used one haddock loin from Costco for both of us and it was just right.

Ingredients
- 2 servings
- 1 haddock loin (or halibut or cod)
- 2 tbsp. Hellmann's with olive oil
- 4 finely chopped black olives
- 1 tsp. grated lemon rind
- 1/2 tbsp. lemon juice
- 1/2 tsp. chopped fresh thyme or pinch of dried
- 1 pinch each of pepper and maldon salt
Preparation
Step 1
Preheat oven to 450 degrees F.
Place fillets on greased or parchment lined rimmed baking sheet.
Stir mayonnaise with remaining ingredients; spread over fish.
Roast for calculated time: 10 minutes per inch or when fish flakes easily with tested with fork.
