Everybody loves - it makes a lot though, so it's suitable for a crowd.

Ingredients

  • 2 cups all-purpose flour
  • 1/2 tsp. dried savory or 1 tsp. fresh thyme or fresh rosemary, finely snipped
  • 1/4 tsp. sea salt
  • 2 cups milk
  • 6 eggs
  • 1 lb. pork sausage links (original recipe calls for 2 lbs.)

Preparation

Step 1

In bowl, stir together flour, savory and salt. Whisk milk together with eggs then whis gradually into flour mixture until smooth. Let stand for 30 minutes.

Meanwhile, prick sausages; place in greased 13 x 9" baking dish. Roast in 375 oven, turning once, for 25 to 30 minutes, or until golden. Drain off all but 2 tbsp. of fat.

Remove from oven; increase temperature to 425. Whisk batter and pour over sausages. Bake for 25 to 30 minutes, or until puffed and golden.

Serve immediately, with maple syrup on the side.
