Memorable Biscotti

  • 1 C butter, (no substitutes) softened
  • 1 C sugar
  • 3 eggs
  • 1 tsp. vanilla extract
  • 1 tsp. anise extract
  • 3 C flour
  • 1 TBS. baking powder
  • 1/2 tsp. salt
  • 1 C chopped almonds

Preparation

Step 1

1. Cream butter and sugar Beat in eggs, one at a time. Stir in extracts. Combine flour, baking powder and salt; add to creamed mixture. Stir in almonds. Line a baking sheet with foil and grease the foil.

2. Divide dough in half. On the foil, form dough into two 11x3 rectangles. Bake at 300 for about 35 min. or until golden brown and firm to the touch. Remove from oven.

3. Increase oven temp. to 325. Using the foil, life the rectangle onto wire racks; cool completely. Cut rectangles diagonally with a serrated knife into 3/4 " slices. Place cut side down on ungreased baking sheets. Bake for additional 10 min. Turn over; bake 10 min. longer. Cool completely. Store in air tight container.
