Easy Breakfast Skillet

Ingredients

  • 1 large sweet potato, cubed
  • 2 T solid cooking fat
  • 3 cloves garlic, minced
  • 1 lb ground beef
  • 1 bunch kale, finely chopped
  • 1/4 t sea salt
  • fresh herbs to taste

Preparation

Step 1

Melt fat in skillet, cook sweet potatoes, stirring, for 10 minutes. Add garlic and cook for another 2 minutes, until the sweet potatoes are just soft but still firm enough on the outside not to be mushy.

Remove from the pan and set aside. Add ground beef to the skillet, break up, and brown in the pan for about 10 minutes, or until the juices are reabsorbed and the meat is fully cooked.

Add the sweet potatoes back to the pan along with the kale, salt, and fresh herbs of your choice. Cook, stirring, until the kale has wilted and the flavors have combined - about 3 minutes.
