Curry Shrimp Linguine

Ingredients

  • 1 pkg (16oz) linguine
  • 3 tsp curry powder
  • 1 can (14oz) light coconut milk
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1 1/2 LB uncooked med shrimp - peeled &
  • deveined
  • 1/3 C minced fresh cilantro

Preparation

Step 1

cook linguine according to pkg. direction

meanwhile in lg. skillet over med heat
toast curry powder for 2 min
stirring frequently
stir in milk, S & P

bring to boil
add shrimp
cook 5-6 min or until shrimp turn pink
drain linguine
toss w/ shrimp mixture & cilantro
