Curry Chicken Pumpkin Soup

Ingredients

  • 4 bacon strips, diced
  • 1/4 C chopped onion
  • 2 C cubed peeled pie pumpkin
  • 2 C chicken broth
  • 1 can (14 1/oz) diced tomatoes,
  • drained
  • 1 tsp curry powder
  • 3/4 C cubed cooked chicken breast
  • 1/3 C frozen corn
  • 1/3 C cooked small pasta shells

Preparation

Step 1

in lg. saucepan, cook bacon & onion
over med hat until bacon is crisp
drain

add pumpkin, broth, tomatoes & curry
bring to boil
reduce heat
cover & simmr 8-10 min or until pumpkin
is tender
stir in chicken, corn & pasta
heat through
